Our history over 7 restaurants
With origins dating back to 1975 in Alicante, our history is deeply intertwined with the culinary passion of María José and the entrepreneurial vision of her husband, Pitu Perramón.
Since opening our first restaurant, we have together built a legacy of gastronomic excellence that today encompasses seven restaurants under four brands, each celebrating the rich culinary tradition of the Mediterranean and promoting conscious and sustainable eating.
With an avant-garde philosophy that transcends Mediterranean gastronomy, María José San Román promotes a holistic approach to wellness through conscious eating and culinary innovation, forging an inspiring legacy of taste and sustainability for future generations.

Her husband and each of her three children – Geni, Raquel and Jorge – have played a vital role in the María José San Román Group, contributing their own talents and perspective.
This family collaboration not only strengthens the group, but also ensures that María José’s values and vision are kept alive for future generations.
Our restaurants are joined by San Román Despacho de Pan, an artisan bakery that supplies all our establishments with the best breads and fresh products.
Our Green Heartbeat
With the Terramón vegetable garden at the heart of our activities, the María José San Román Group has established itself as a Spanish benchmark in Alicante society.
This garden, revitalised by Jorge Perramón during the pandemic, uses regenerative agriculture techniques to produce fresh, organic ingredients that supply all the group’s restaurants, guaranteeing maximum quality, respect for nature and the development of a circular gastronomy model.
